Why is this (and other?) pizza oven so unnecessarily tall?

Why is this (and other?) pizza oven so unnecessarily tall? - Shallow Focus Photography of Several Pizzas

I was watching a live stream from a pizzeria. I noticed that the oven appears to be at least twice the size vertically as it has to be. A pizza is flat and even with lots of toppings, it could very easily fit in half that size, or they could have two ovens stacked on top of each other if they need to make lots of pizzas at the same time.

But they just waste all that space for no reason? Why? Am I missing something? Other than just taking up more space, doesn't it also waste twice the electricity/fuel to keep so large of a space hot compared to half of it (vertically)?

Pizza ovens aren't unnecessarily tall. Pizza ovens often go three pies deep, depending on the size of the pizzas, so the space is needed to maneuver pizzas in and out, as well as to see how they are cooking. Many restaurants use the same ovens to bake pasta dishes, meatball heroes and other things which are thicker than a pizza, so the space is important there as well.

How high should my pizza oven be?

If using a commercial pizza oven, aim for a temperature range of between 600F (350C) and 850F (450C). I'd recommend you cook at 600F, though. This temperature is enough to produce a crisp base and perfectly melted cheese in just 90 seconds.

How do you adjust a pizza oven?

If you're looking for a crispy crust, set your oven at around 450 degrees Fahrenheit or 232 degrees Celsius. For a soft and chewy crust, set your oven at around 350 degrees Fahrenheit or 176 degrees Celsius. If your pizza is heavy on the toppings, you may need to bake it for a bit longer.

Why are pizza ovens dome shaped?

1. Shape and dimensions. Normally the shape of the pizza oven is half-spherical to really influence the circulation of air inside it. The dome shape forms a small pocket where hot air generated from the fire circulates above the pizza and the heat is transferred by radiation.

What is a big pizza oven called?

A masonry oven, colloquially known as a brick oven or stone oven, is an oven consisting of a baking chamber made of fireproof brick, concrete, stone, clay (clay oven), or cob (cob oven).
