Say I wanted to make a large amount of dough, then divide it into smaller portions to send to cafes, etc. How would I package the divided dough? Do I just put it in a plastic bag or something similar?

Note sure if this matters: the dough will come from an overnight cold rise. Refrigerated shipping will be required.

I would wrap in freezer-safe cling wrap and then put that into freezer-safe ziplock bags. Use sharpie on the outer bags before bagging to write the date and what's in it (or put a sticker on it if this is more of a professional operation or if it's something the public will be buying directly). If this is something you'll be doing a lot you should get a vacuum sealer for the outer bag.

How do you store dough?

You can put the dough in a bowl and cover the surface with plastic wrap, wrap the entirety of the dough in plastic wrap, or simply place it in a sealed plastic bag or airtight container.

How do you store unbaked bread dough?

Put the bread dough in an airtight container in the fridge for up to a day.
  • Store the dough in the refrigerator after the first rise. Let it rise again on the counter when you pull it out of the refrigerator.
  • If the recipe only calls for one rise, place the dough in the fridge after you knead it.

  • How do you store dough for the next day?

To save the dough for the next day, you should knead it first. Then, take the dough and place it in a lightly oiled mixing bowl. The oil is to prevent it from sticking to the bowl. Finally, cover the top with plastic wrap and refrigerate overnight.

How long can you store dough?

A dough will last approximately three days in the refrigerator; however, it is best to use it within 48 hours. This is the best way to refrigerate your dough. After the dough is kneaded, place in a lightly oiled, large mixing bowl. Cover tightly with plastic wrap and place in refrigerator.
