I have my grandmothers handwritten recipe for banana bread. the paper tore and I lost some of the recipe. it calls for 1 1/2 cup sugar, 2 cups flour, 3/4 tsp baking soda, 1/2 cup of milk, 1 tsp vanilla, 3 mashed bananas. I lost the amount of salt, baking powder, shortening and eggs. can anyone tell me how much of each I need to make this recipe?????

That is a lot of sugar for that much flour. The salt and baking powder are likely to be one teaspoon each or 3/4 teaspoon each. It probably called for 1/2 cup shortening (consider butter or butter flavored Crisco, but that's just me), and 2 eggs. Give it a shot and let us know how it goes.

Why does my banana bread have no flavor?

If your banana bread doesn't taste like bananas, it could be that you didn't use bananas that were ripe enough. The flavour of a ripe banana is quite different than a green banana. Choose the ripest bananas possible. Some bakers recommend using bananas that are on the verge of over-ripe with completely black peels.

What happens if you put too much baking soda in banana bread?

Too much baking soda causes cakes to brown and may leave a weird taste. The Maillard reaction speeds up under basic conditions (like when you add to a recipe a lot of baking soda, which is alkaline, i.e. basic).

What happens if you put too much banana in banana bread?

Fight the urge to use more banana than called for in your recipe. Using too much banana could make your bread heavy and damp in the center, causing it to appear undercooked and unappealing. If you have bananas leftover, you can always freeze them for later use.

Why is my banana bread not fluffy?

The more you mix your banana bread batter, the more gluten is developing in the bread \u2013 which is great for a yeast-risen, chewy loaf, but not so great when you're hoping for a tender, soft quick bread. An overmixed banana bread batter will result in a dense, rubbery loaf.

My grandmother's recipe calls for the following (of the ingredients you asked):

1/2 C canola oil
1 tsp baking soda
1/2 tsp salt
1 egg

I agree with Jolenealaska; that's too much sugar. Also maybe a bit much flour, but you might be making a loaf which rises to the top of the pan.

I prefer oil in this case. It makes the loaf very moist. I almost never use shortening. I prefer butter or oil.
