Can I substitute a top round beef roast with a beef rib eye roast?

Can I substitute a top round beef roast with a beef rib eye roast? - Person Holding Grilled Cheese Burger

I have a recipe that calls for a 7 lb. top round beef roast with full fat cap. You salt the beef for 2 days and then set oven for 450 and roast for 20 min. Reduce to 225 and roast for 1 hr. 30 min. Can I use a beef rib eye boneless roast instead of the top round beef roast?

Best Answer

Yes. You may want to baste from time to time if there's little fat, and ribeye benefits from lower and slower cooking--which you pretty much seem to have here--but otherwise yes. You may wish to check out Ad Hoc at Home, by Thomas Keller, which discusses roasting a ribeye.

Is eye of round roast the same as rib roast?

Of the 3 parts of a round steak, the eye of round is the most tender. (BUT, it is NOT as tender as a rib eye). The rib eye, either roast or steak (both are always boneless) come from the front quarter of the beef, from the area of the backbone.

Is top round the same as eye of round?

Top Round. The top round is more flavorful than the eye of the round, but is slightly less tender. Also coming from the round primal, this cut is very lean. The top round is one of the smaller round cuts as it comes from the inner-part of the rear leg.

Which is more tender eye of round or bottom round?

The top round is very lean but tends to be more tender than the bottom round, and is often cut into steaks (which are sometimes labeled "London broil"). The bottom round, which is divided into a bottom round roast and a rump roast, is a bit tougher.

Can you substitute eye round for chuck roast?

Round Roast Substitutes: This roast might be labeled as top round or bottom round (also called the rump roast). If you can't find either, chuck roast makes a great swap, although it contains more fat.
